What is Oenzym?

Oenzym is an amalgamation of the words oenology and zymurgy. The former being the study of wine and the latter being the applied science of fermentation.

Oenzym is a blog showcasing Canadian wine, craft beer and spirits as well as some tasty tipples from around the world. With this blog I hope to share with you my love for these beautiful elixirs and lead us on a flavorful adventure of discovery.  

Who is Oenzym?

Oenzym was created by TJ Shirk in 2021 as an outlet to share my personal enjoyment of all things wine beer and spirits. I hope to one day receive my Sommelier accreditation. I am also a cigar and pipe tobacco enthusiast, a hobby that often finds me musing over a lovely libation or several.

In my personal life I am a husband, father, musician, outdoorsman, and polymath.
